In 1998 Vivianne and Edmond Rizk opened a fresh produce market in the former Food Lane shopping plaza on Sullivan Trail (Rt. 115) in Forks Township. To prevent unsold vegetables from going to waste, Vivianne started making salads, with recipes from her native country, Lebanon. Vivianne's tasty offerings were a hit and created a demand for more Lebanese specialties - like her intensely green and flavorful tabbouleh and outstanding herb-enhanced Lebanese potato salad.

Working with Edmond, who has 30 years of experience as a chef, Vivianne developed a popular selection of Middle Eastern treats. Recently, the Rizks changed the name of the shop from Forks Produce to Forks Mediterranean Deli, to reflect the store's new emphasis on prepared foods.

All of their specialty foods are prepared fresh daily and WITHOUT preservatives added. They carry a wide selection of imported spices, cheeses, oils, candies and other exotic delicacies not found locally anywhere else.

• SHAWURMA - It is the ultimate meat sandwich. They prepare it in the centuries-old way-marinating top sirloin of beef with a wonderful combination of spices, cutting it thin and placing the meat on the Shawurma machine to slow roast. The meat is shaved again before serving it in a big thick fresh pita with wonderful tahini sauce. It is a Lehigh Valley Exclusive since you won't find authentic Shawurma anywhere in the Easton area because Forks Mediterranean Deli has the only machine around. They alternate different types, like beef, chicken, and lamb. So call to ask which one is being served.
